Odds & Ends Cookies

Whipped these up as was feeling like a sweet treat & thought how better to use some odds & ends from the pantry!

I like to focus on ingredients over recipes to reduce waste.


When I have things to use up I check Pinterest & search for recipes using that ingredient. Thats what led me to these sweet morsels.

Adapted from @bromabakery healthy GF choc chip cookies recipe I was pretty pleased with how they turned out as my baking experiments rarely do!

I had almond meal & cashew butter that needed to be used (the original recipe called for almond but I switched). You could add in any nuts & seeds & switch the egg for a flax egg if you prefer.

Perfect as a sneaky lunchbox treat or double the batch & freeze half the dough for later!

Ingredients

1/2 cup cashew butter or Peanut butter
1/3 cup coconut oil, melted
1 tbsp maple syrup
4 tbsp honey 
1 egg
2 teaspoons vanilla extract
1 3/4 cup almond meal
1/2 teaspoon baking soda
1/2 teaspoon salt
A handful of each choc chips, pumpkin seeds & sultanas

Method


Leave mix in fridge for an hour (wait impatiently for it to harden) then bake for 15 on 180 & leave to cool before enjoying with a cup of tea.
