Scrap Banana bread

Inspired by my toddler who loves banana one day then biffs it on the floor the next!

I try to minimise food waste whenever I can & if the food isn't spoiled in anyway it may lend itself to being repurposed.

Banana scraps get washed & popped into the freezer until I have enough to whip up this tasty little marvel. Saves waste & you have a gorgeous slice of something to enjoy with a cuppa while cleaning the floor.

Ingredients

3 Bananas (or enough scraps to make up 3)
1/4 cup packed light brown sugar
1/3 cup Olive or coconut oil
1/4 cup water
1 tsp ground cinnamon
1/4 tsp salt
2 cups self-raising flour 
1/2 tsp baking soda
1/4 cup chopped walnuts (or other nuts) - optional
Frozen raspberries, pepitas or seeds to top - optional

Method

  1. Mash Bananas roughly  & add sugar, oil, water, cinnamon and salt in a medium bowl & mix until smooth.
  2. Stir in the flour & baking soda) until just combined.
  3. Add optional toppers if desired. This is often dictated by what I have in the fridge
  4. Pour into a prelined/greased baking tray & bake at 180°C for 40-60 mins until a skewer inserted comes out clean. 
  5. Leave it to cool slightly before slicing...if you can wait!

Variations

This recipe lends itself well to swapping out the bananas with similar fruit. I have also made this with leftover stewed rhubarb in place of half the bananas & added cooked pears.
