Ingredients
- 1 cup dried elderberries
- 4 cups filtered water
- 1 cinnamon stick
- 5 whole cloves
- 1 tbsp fresh ginger, grated
- ½ cup raw honey
Method
- Add the elderberries, water, cinnamon, cloves, and ginger to a large saucepan and bring to a boil.
- Reduce heat and simmer for around 45 minutes, or until the liquid has reduced by half.
- Allow to cool slightly, then strain through a fine sieve or cheesecloth, pressing the berries to extract as much liquid as possible.
- Stir in the raw honey until fully dissolved.
- Pour into a clean glass jar or bottle and store in the refrigerator for up to 2 months.

This recipe makes approximately 2 cups of elderberry syrup.
Enjoy it by the spoonful, stirred through warm water as a soothing winter drink, or drizzled over porridge, yoghurt, or pancakes.
